Variety: 100% PIGATO
Vineyards: In Salea d’Albenga with south-west exposure overlooking the sea
Altitude: 150 metres above sea level
Training system: Organic spurred cordon

Soil: Red, siliceous, stony, very mineral
Vinification: Destemming, cold maceration for 12 hours, soft pressing
Alcoholic fermentation: In steel at a controlled temperature of 19°C for approximately 3 weeks using indigenous yeasts
Ageing: Batonnage for 6 months in steel and a small portion in used wood

2024 production: 9,750 bottles
Alcohol content: 13%

Organoleptic characteristics: Straw yellow colour with golden reflections, bright, consistent.

Recommendations and pairings: Pigato pairs well with traditional Ligurian dishes, even the more structured ones that need good acidity to balance their oiliness (such as Ligurian-style rabbit), and fish dishes that need a good minerality. ‘Surprisingly round for its age, the aromas are those of ancient Pigato, Mediterranean scrub, thyme, cornabuggia, savory, but also yellow peach and green apple. Just the right amount of minerality, enveloping and balanced on the palate.’
